Pancake Roll

Definition: Pancake roll, also known as Shibing, is a Taizhou-flavored snack. It is a bamboo tube-shaped cake prepared from wheat flour and water-mixed batter, cooked on a hot griddle or frying pan, and stuffed with rice noodle, eel shreds, pork, shreds of wild rice stem and other fillings.

In Linhai, Shibing may be written as “麦油脂” in Chinese character, while Luqiao people use “麦油煎” as its written name. Related researches reveal that “麦油煎” is more reasonable because in Linhai dialect, “脂(zhī)” is a homophone of “煎(jiān)” and “煎” was mistakenly written as “脂”.

 

In Wenling, “Xibing” is called “Tin Cake” simply because it is as thin as tinfoil.
