Dried yellow croaker is made of large yellow croaker. Taizhou boasts a lot of large yellow croakers with the annual output of about 10,000 tons before the 1960s. All the fishing areas made dried yellow croakers according to the tradition. The white dried fish in Songmen Town, Wenling is as famous as described as “Songmen Dried Fish is the best all over the province” in Zhejiang Industry and Commerce Yearbook published in the Republic of China.

Songmen White Dried Fish is renowned for its white color. It boasts the 800-year history (since the Song Dynasty) as the traditional specialty in southeast coastal area. “In the Pacific Ocean there is Songmen Island, on which stand pines; the island is open to small oceans; it is rich in fish, which can be made into tasty dried fish” was written in Taizhou Prefecture Annals during the Emperor Kangxi’s reign in the Qing Dynasty. The fish less chopped and less dried in the sun is called “Weak Dried Fish”, while the salted and dried fish is called “Salted and Dried Fish”. The dried fish made in dog days is the best.
